The history of teppanyaki dates back to the early years after WWII in Japan. In order for the Japanese to co-exist with the occupying Americans and to relish their meaty diets (traditional Japanese diet is heavy on rice and fish).
Japanese restaurateurs came up with the idea of cooking meat on a hot steel grill in front of their guests so they could see everything prepared and at the same time, socialize with them.
